DESIGNATION OF ORIGIN
In Argentina, over half of the cattle have Angus blood, which is characterised by its intense flavour. All our cuts come from certified Angus livestock.
Its origin comes from the Black Aberdeen Angus breed. Its adaptability to low temperatures means its meat contains more infiltrated fat that is uniformly distributed.
Its original name in Japanese means ‘Japanese cow’. At 9Reinas, our selection contains a filtration level of 5.
From Jiménez Barbero and his cross-breeding of indigenous country cattle. Some cuts from La Finca come from calves but mainly from larger cattle and oxen.
As part of our offer of meat from around the world, 9Reinas has selected the best cuts for the delight of our diners.
From Argentina we import five prime cuts: sirloin, entrecote or fore rib, rib eye, picanha and rump. On a national level, we serve offal, flank steak and cuts of different weight including entrecote, rib eye and T-bone steak. From Japan we have the best Wagyu cuts of offal and picanha. And coming from Nebraska, we have entrecote and the ribs.
